The grapes are hand-harvested in December at temperatures between -5°C and -10°C while the berries are naturally frozen. This technique yields a unique sensory profile: a kaleidoscopic bouquet of alpine herbs, honey, dried fruits, and candied citrus peel. On the palate, it is never cloying; its sweetness is perfectly balanced by a vibrant citrus acidity and an endless mineral finish.
